How Long to Cook a Chicken Breast in the Oven

A boneless, skinless chicken breast (around 180 g) takes 18–22 minutes at 200°C (fan 180°C / 400°F). It is done when the thickest part reaches 74°C and the juices run clear. Bone-in breasts take a little longer.

A cooked chicken breast must reach an internal temperature of 74°C (165°F) at its thickest point. Use a meat thermometer — colour is not a reliable guide.
A boneless chicken breast takes about 22–26 minutes at 180°C (fan 160°C). Bone-in breasts take 30–35 minutes.
Do not overcook — pull it at 74°C and rest 5 minutes. Brining, or cooking at a slightly lower temperature, also helps keep it juicy.
